Vinificatie: De druiven worden ontsteeld, geselecteerd en gekneusd. De most wordt samen met de schillen en pitten in een open fermentatievat gegoten. De alcoholische fermentatie vindt plaats bij een gecontroleerde temperatuur voor 20 tot 25 dagen. Na de alcoholische fermentatie vindt er nog een malolactische fermentatie plaats, waarbij de appelzuren in de wijn worden omgezet in melkzuren. Dit geeft de wijn een zachtere smaak. De wijn wordt vervolgens voor 15 maanden gerijpt in kleine eikenhouten vaten. Na 15 maanden wordt de wijn overgepompt in grotere eikenhouten vaten van 25 hectoliter. In deze vaten rijpt de wijn nog 10 maanden. De wijn wordt vervolgens gebotteld en rijpt nog 12 maanden in de fles.

Kleur: granaatrood met lichtoranje reflecties, intens en briljant

Geur: zuiver en complex met fruitige aroma’s van pruimen en kersen, bloemige aroma’s van violen en kruidige aroma’s van kaneel en zoethout.

Smaak: vol, harmonieus en warm met een aanhoudende en aangename afdronk.

Wijn-spijs: gegrild rundvlees, ragù, wild en daarnaast perfect als meditatiewijn.

Serveertemperatuur: 18-20˚C
