Over Bodega Soto Manrique

Sotomanrique is een uniek wijnproject dat in 2012 werd opgericht door Chuchi Soto, na een kwart eeuw ervaring in de kwaliteitswijnwereld. Het domein is gelegen in Cebreros, waar traditionele Garnacha- en Albillo Real-druiven op graniet- en leisteenbodems worden verbouwd. Sotomanrique richt zich op het herstellen van oude, kleinschalige wijngaarden en het creëren van wijnen die de authenticiteit van het terroir weerspiegelen.

Vinificatie

Voor de verwerking worden de druiven gekoeld tot 0 ºC. De alcoholische gisting vindt plaats in betonnen tanks. Vervolgens rijpt de wijn 12 maanden in foudres van 20 hectoliter.
