Our Yoshihiro HAP40 High Speed Stainless Steel knives feature a hardened HAP40 powdered metallurgy core, heat treated to 66–68 HRC. The stainless-clad construction provides a balance of toughness, corrosion resistance, and ease of maintenance. HAP40, developed by Hitachi, is highly sought after for its exceptional cutting ability, edge stability, and long-lasting sharpness. While extremely hard, it is easier to sharpen than ZDP-189 due to its lower chromium content. Its hardness delivers outstanding wear resistance and edge retention, though the lower chromium also means it can tarnish more easily if not cared for.
