Il Collio Ribolla Gialla DOC di Simon Komjanc si presenta di un bel giallo paglierino carico. Al naso si esprime con intensi sentori fruttati, di fiori bianchi e di erbe aromatiche, con sbuffi iodati in sottofondo. Al palato entra con una buona morbidezza glicerica, ben sostenuta dalla vivace contrapposizione tra freschezza e sapidità. Finale lungo e persistente su toni minerali e fruttati.La ribolla gialla vanta antichissime origini friulane e sul versante Goriziano offre il meglio di se, esaltando le caratteristiche varietali e il terroir marnoso e calcareo. Le uve vengono vinificate dopo una scrupolosa vendemmia manuale e fermentate in acciaio con lieviti selezionati e a temperatura controllata. Dopo un lungo riposo sulle fecce, affina per un mese in bottiglia.
Ottimo per accompagnare svariate preparazioni a base di pesce della cucina di mare, salmone e pesce spada affumicati, sformati e risotti di verdura.
