This 60 liter batch is an example of a field blend, that is stylistically typical of many producers in Miahuatlan. Four different agave varieties were used in making this Ensamble: 45% Bicuixe, 25% Coyote, 25% Tepextate, and 5% Madrecuixe. The were all roasted together for six days, then crushed by a large tahona. After they were milled,

The were all roasted together for six days, then crushed by a large tahona. After they were milled, the agaves fermented with naturally occurring yeasts for six days in a single pine tank.
