Harvest: Hand-picked into crates
No enzymes or sulfites are added. Cold settling takes place after 48 hours. Alcoholic fermentation occurs using indigenous yeasts in 20hl oak casks.

Aged for 18 months, including 12 months in large oak casks. Then racking and blending of the casks, followed by a final 6 months of aging in bulk. Bottling takes place in the spring on a fruit day, without fining or filtration.

This flagship wine of the estate offers remarkably expressive fruit in its youth, then the minerality of the limestone terroir takes over with age. The ample and complex palate lingers beautifully thanks to its consistent balance, even at high ripeness.
