Each handmade Yoshihiro Honyaki knife is crafted with unparalleled skill, forged from the highest quality steel using traditional methods employed by master artisans, some with over 50 years of experience. Honyaki, meaning true forged, symbolizes the pinnacle of Japanese knives, demanding expertise from seasoned knifesmiths well-versed in the ancient art of sword making. Crafted from a single piece of White Steel #2 with a remarkable hardness of 65 on the Rockwell scale, the steel is heated in hearths reaching thousands of degrees, quenched in cool water for optimal hardness, and polished to a brilliant mirror finish, resulting in knives that perfectly blend aesthetics with performance.

The Sakimaru Takobiki is a long slicing knife specifically designed to create paper-thin slices of fish for sashimi. Its round sharp tip is particularly effective for cutting the long tentacles of sashimi. The beauty of its elegant, thin blade lies in its ability to glide through ingredients in long, uninterrupted strokes, preserving their integrity and freshness.
